Puissance Waffles

(vegan, gluten-free)

Classic waffle recipes are typically high in fat and simple carbs, low in fiber, and serve only as a carrier device for maple syrup. These Puissance Waffles, which I can’t stress enough taste like proper delicious waffles, are vegan, gluten-free, and high in fiber (2g/waffle) and protein (4.2g/waffle). The banana, applesauce, and flaxseed add structure, flavor, fiber, and the soy milk provides protein. Most commercial soymilk is too sweet for savory recipes, but it works perfectly for baked goods. The waffles are slightly sweet, light and airy inside, and they crisp perfectly in the waffle iron.

I initially called this recipe “Power Waffles,” but honestly, calling everything “power” was getting way too trite. So, instead of “Power Waffles”, these are now called “Puissance Waffles.” I may be pretentious, but at least I’m original.

INGREDIENTS

  • 1½ cup millet flour (240g)
  • ¾ cup sorghum flour (105g)
  • ½ cup tapioca starch (60g)
  • ¼ cup potato starch (48g)
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ¼ teaspoon xanthan gum
  • 1 ¾ cups soy milk
  • 3 tablespoons ground flaxseed
  • 1 soft banana, mashed
  • ¼ cup unsweetened applesauce
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon canola oil (or other mild tasting oil)

INSTRUCTIONS

  1. Whisk together millet flour, sorghum flour, tapioca starch, potato starch, sugar, salt, baking soda, and xanthan gum.
  2. In separate bowl, mix together soy milk, flaxseed, banana, applesauce, lemon juice, and vanilla. Let sit for 5-10 minutes to hydrate flaxseed. Stir canola oil into liquid ingredients.
  3. Add liquid ingredients to dry ingredients and mix just until there are no lumps.
  4. Cook in lightly greased waffle iron using ¼ cup batter per waffle.
